This cauliflower mash with cream cheese is something we introduced for the holiday season, but I have a feeling you’ll make this recipe over and over again. It’s easy to make, irresistibly rich, and it will keep you full for hours.

Just as creamy as a classic potato mash, only without carbs, this cauliflower mash steals the spotlight. It also looks good on the Thanksgiving table. To make it pop, we served it with a dollop of butter and festive pink peppercorns.

Thanksgiving keto cauliflower mash sprinkled with pink peppercorn

 2 cauliflower heads
 1 cup cream cheese
  cup cheddar cheese, shredded
 2 tbsp ghee (or butter)
 ½ tsp salt
 ½ tsp black pepper
 1 tsp pink peppercorns

Cut the cauliflower to same size florets. Bring a pot of lightly salted water to boil and cook the cauliflower for 10-12 minutes until tender.

Strain and return to the pot. Add cream cheese, cheddar, ghee, salt, and black pepper.
