Everyone loves a good quiche. It looks chic and sophisticated, it’s easy to put together, and you can play around with ingredients. This one is a crustless version of the classic, which is great for reducing the number of carbs while keeping all the flavors and amazing textures. 150 g bacon
500 g spinach, fresh
6 eggs, whisked
½ onion, chopped
¾ cup heavy cream
200 g cheddar cheese, grated
¼ tsp nutmeg
½ tsp salt
¼ tsp pepper

Preheat the oven to 350°F and grease an 8x8 inch baking pan. Then, heat up a non-stick pan on a stove. Slice the bacon into thin strips, put it in the heated pan (with no oil!) and fry it for about 2-3 minutes until the bacon is crispy and golden brown.

Add the spinach and onion to the pan and mix with the bacon. Let it simmer for a couple of minutes to wilt down the spinach.

Remove from the heat and add the cheese, cream, eggs, and season with nutmeg, salt, and pepper.
