Everyone loves a good quiche. It looks chic and sophisticated, it’s easy to put together, and you can play around with ingredients. This one is a crustless version of the classic, which is great for reducing the number of carbs while keeping all the flavors and amazing textures. Preheat the oven to 350°F and grease an 8x8 inch baking pan. Then, heat up a non-stick pan on a stove. Slice the bacon into thin strips, put it in the heated pan (with no oil!) and fry it for about 2-3 minutes until the bacon is crispy and golden brown.
Add the spinach and onion to the pan and mix with the bacon. Let it simmer for a couple of minutes to wilt down the spinach.
Remove from the heat and add the cheese, cream, eggs, and season with nutmeg, salt, and pepper.
Transfer into the prepared baking pan and bake for 40-45 minutes. Serve warm.
